CLASSICS IN A NEW WAY

The Slavic cuisine is famous for its ordinary dishes with the taste noninferior to refined European foods. Vareniki (cottage cheese dumplings) and pelmeni (meat dumplings) hold pride of place for a table.

For example, pelmeni  – is a visiting card of the Russian cuisine. In different countries they are known under different names, in Italy – ravioli, in Central Asia – manti, in Caucasus – khinkali and in Belorussia – kolduni. Here is an abstract from “Moscow and Muscovites” book by Gilyarovskiy: “There were only two changes: first – appetizers and second – “Siberian pelmeni”. There were no any more dishes, but for twelve eaters there were prepared 2,500 pieces of pelmeni including with meat, fish and fruit fillings in rose champaign…”

Of course it is rather peculiar original, but “Grabli” offers you to have a new look at classics and try appetizing pork, lamb and of course dietetic chicken pelmeni. Love and respect, but also onions and black pepper are put into our famous hand-made pelmeni. Larruping!

Let’s go to vareniki from pelmeni. They melt in mouth! Only clouds are tenderer than our vareniki. Do you remember how Patsuk in “Evenings on a Farm Near Dikanka” ate vareniki: “there were two wooden bowls on the floor: one was full of vareniki and the other with sour cream…Patsuk opened his mouth, took a glance at vareniki and opened his mouth even wider. At this moment a varenik jumped from the bowl into sour cream turned to the other side sprang up and got just into his mouth. Patsuk got it down and again opened his mouth, and a varenik did in the same way. He had only to chew and swallow”.

But he has not visited “Grabli” yet! Our vareniki are only hand-made from fresh and simple products (flour, eggs and water). And fillings are finger-licking: potatoes or mushrooms with fried onions, and for dessert – tender cottage-cheese with vanilla. It would be a good idea to arrange “Vareniki” festival!
